When the seasoning layer on your griddle dries up, or too much water is used when cleaning, the seasoning layers peel and flake.

To resolve this issue, scrape off the old seasoning and re-season your griddle plate.

  

Remove the old seasoning layers:

1.  Turn the burner knobs and propane off and disconnect the regulator from the propane tank.
2.  Scrape off the flaking with a metal-edged scraper.
3.  Scrub off remaining seasoning with a small amount of oil and a griddle stone, steel wool, or medium-grit sandpaper.
    *   You can use water instead of oil. However, leaving water on the griddle top may cause rusting.
    *    We recommend using a [griddle cleaning kit with a griddle stone](https://blackstoneproducts.com/products/griddle-refurbishment-kit?_pos=8&_sid=f052a9995&_ss=r) to help scrape the old seasoning off.
4.  Remove excess oil and debris with paper towels or cotton cloth.
    *   If needed, rinse the surface with water and dry before you re-season.

To prevent flaking seasoning layers:

*   Avoid seasoning with bacon fat. Bacon has additives like phosphates and salt that interfere with creating a strong seasoning.
*   Ensure you smoke off all your oil layers properly when seasoning. Before putting on a new coat of oil, the seasoning layer should be darkened in color, no longer billowing smoke, and not [chalky](https://help.blackstoneproducts.com/en_us/burned-chalky-or-white-seasoning-ryJyu_gpkl). 
*   Avoid using too much oil for your initial seasoning layer, which can create a thick brownish layer on your griddle top, leading to [over-seasoning](https://help.blackstoneproducts.com/en_us/why-do-i-have-tacky-buildup-on-my-griddle-plate-B1Z9hCsWa).
*   Avoid using soap to clean the griddle plate. Soap is a degreaser and breaks down your seasoning.
